“Perkelt od podolca” from the Slavonian-Srijem sub-region

The Slavonian-Srijem Podolac is one of the three original and protected breeds of cattle in Croatia, along with the Istrian Boškarin and Buša. In their restaurant Citadela, the Lazar family from Vardarac prepares this exquisite delicacy, which is served with homemade pasta, to which is added homemade fresh cow's cheese and fried homemade bacon, which gives the dish a crunchiness. A specific type of paprika gives this dish an exquisite taste.
